If you're anything like me, you struggle to think of meals to cook for dinner every...single...night. And usually we ask for ideas on what to cook and the standard answer is "I don't know, whatever you like.". Sigh...


My mum used to ask my sisters and I this question every week when we were teenagers and our response was almost always "I don't know". My mum would just sigh and back then I didn't really understand why she didn't like our answer...now I know!I find that I am cooking the same recipes over and over on a 3 week rotation. I'm getting bored and I can tell that my family is getting bored too.


Just when I thought that I would be cooking another meal from my "standard dinners" my thoughtful husband saved the day gifted me Justine Schofield's "The Weeknight Cookbook" for Mother's Day this year and let me tell you it has been a life saver! The recipes are quick and/or easy to make and the book is based on cooking yummy and healthy meals with your pantry staples and only having to purchase a few items from the grocery store.

My family have tried several recipes and they are all very very yummy! And as a bonus, my kids love them too! I can confidently say that I will eat almost every meal that is in this book.

Go out and purchase this book, I highly recommend it!

So, to hopefully help out another mother that is looking for dinner inspirations, I have listed below my top 5 quick and easy dinner recipes from this fantastic recipe book.



This recipe only takes 5 mins to prep and 15 mins to cook. The serving size is for 2 people so you may need to double or triple it depending on the size of your family.

We didn't have white wine in our pantry when we cooked this particular recipe, so we just looked up on Google what we can use to substitute it with and it still tasted great.



This recipe is a great one to cook when you have lots of people over. It tastes great and is incredibly filling. I added lentils to bulk up the protien in the dish. Next time I am going to replace the tuna with minced beef and see if it tastes just as good!



I have cooked this recipe twice now and it tasted just as good the second time! This dish served with crusty bread is a winner. And the best part is that the oven does all the cooking, you don't need to use a stove top at all!



The recipe I linked here is a lamb souvlaki but apart from that it is exactly the same. This is the very first recipe I cooked from this recipe book and it was SO YUM!!



This is final recipe I would like to share and I saved the best for last. I absolutely loved this cottage pie! It looked just like the picture in the recipe book and it tasted even better.

And the best part is that it heated up well for leftovers the next day :)
